LaWann’s Famous Infused Sweet Potato Pie: A Butter Brewer Review

Packaging: Secure and nicely presented as if I’ve opened a new kitchen appliance.

Size: The size is pretty significant, and a con for me. My kitchen is small with limited counter space, cabinet space, and no pantry or storage areas.  When not in use, BB would have to be stored away in its original packaging. Those with larger kitchens and or a commercial store location may not have an issue here though.

Accessories: Curved spatula, spinner, removable nonstick pot, drainage sleeve, instructions booklet.

Instructions Booklet: I would prefer the booklet to list out the decarboxylation times versus having to look it up on their website.  For example, I’d love the ability to process CBG with this Butter Brewer, but I couldn’t locate any information on its compatibility. 


Decarboxylation: This process took approximately 60 minutes which can be a plus to cut down on some time if needed.  I used CBD Hemp which is a longer time needed than THC according to the instructions on butterbrewer.com The smell of baking cannabis permeated the kitchen about 20 minutes in; 40 minutes in the main and upper level had a strong bud smell.  After one hour the softest beep chimed. Stoners may miss it, but it’s safe to stay inside for a while. According to the instructions, it's best to allow it to cool before infusion begins. Opening the top, you can see the flower is nicely decarbed with a nice cook tone and not burned.

Infusion: I split the ounce in half and infused coconut oil and ghee butter.  Infusion time was similar to stove top or other infusion machines at 2 hours and 165 degrees. The scent is still very present, if that’s a concern. Post-infusion, the oil and butter are nice and potent green.  The spinner inside does a great job at ensuring an equal distribution.  Having the option to choose the intervals is an added plus. The strainer released small particles still, if that is an issue you can double strain or use food grade paint strainer inside. 

The non-stick surface makes it easy to not lose any materials along with the curved spatula.  I feel a chef or someone that bakes assisted in this decision!


Baking: As a baker I wanted to test the limits of this machine to see if it could handle a Strib’ble Treats best seller.  Infused Sweet Potato Pie…  I went all the way in with a full-sized pie not realizing the highest temperature setting is 300 degrees. 

Due to the shape of the Butter Brewer I had to use a mini foil pan to level out the 9 inches pan.  I knew it would add additional baking time so I set the brewer to 2 hours. 

After 90 minutes passed, I saw that the pie was still very raw.  The butter brewer has an option that allows you to add more time while baking and also adjust the temperature if needed.  I selected to add 2 more hours.  Hour three looked like we were getting somewhere, so the excitement came over me! At 4 hours the pie looked almost ready but not quite there so, I added 30 more minutes.

Finally, after 4.5 hours of baking, I decided to go with it. I removed the inside pot and sat it out on a wire rack to help with cooling.  I wanted it to set well, so I stored the pie in the refrigerator overnight. 

Cleanup: The non-stick surface makes cleaning up a breeze. Soapy hot water wash and clear water rinse, easy-peasy!


Final Thoughts:

I absolutely love the Butter Brewer for large quantity decarboxylation and infusing.  It seemed pretty accurate post decarb and herbs infused. I’ll have to experiment on smaller items to bake as this is not functional to replace as an oven. However, I feel this would be great to use for turkey dip and or holiday meatballs. This pie didn’t bake as if it came out of the oven, the crust never fully baked to give the buttery flaky taste and the insides didn’t heat up well for a great custard filling blend.
